Origin Information:
At Los Cedros, around 20 staff members are involved in the coffee harvest. The cherries are processed using an environmentally conscious mechanical mill. They are then fermented in traditional tanks for 28 to 32 hours, with the fermentation time carefully adjusted according to weather and temperature conditions. After fermentation, the coffee is slowly and meticulously dried over 20 to 25 days.
The entire process is a family effort, with strict hygiene standards maintained at every stage to ensure the highest quality.
