Dely Suyapa Matute is an incredibly inspiring woman.
She is a mother of six and grew up picking coffee cherries with her father. She always dreamed of owning her own farm, but it was not easily achieved. Her husband moved to the United States to support the family financially, while she stayed in Honduras to care for their children. Thanks to their efforts, they were able to purchase a small farm.

While waiting for her husband to return, Dely continued to work hard, raising over 10,000 coffee seedlings. In 2014, the couple entered the Cup of Excellence competition and achieved an impressive 4th place finish. Dely says that what she loves most about coffee production is that it’s something her whole family can do together.

The final stage of coffee processing involves the dry mill, where the parchment is removed from the dried green coffee.

Large mills (companies that operate dry mills to remove parchment) usually don’t run their equipment for small lots. A lot refers to a batch of green coffee grouped by plot, variety, or harvest date. Running a mill for a small lot is simply too costly.

As a result, smallholder farmers are often forced to create larger lots by mixing their coffee with harvests from neighboring producers in order to access mill services. This structure anonymizes producers and leads to uneven quality as coffees are blended into regional lots.

High-quality coffee purchasing requires strong traceability—the ability to identify the producer and origin.

The project in this region, managed through Nordic Approach (the coffee’s intermediary), aims to mill and process each producer’s coffee separately, allowing them to access higher prices based on quality.

For us as roasters, this is a win-win approach that enables us to encounter unique, high-quality coffees from individual producers.
