This coffee has a distinctive fruity flavor reminiscent of fresh grapefruit and cherries. When you put it in your mouth, it has a light and refreshing taste. The aftertaste has a gentle sweetness reminiscent of a hint of nuts.


Located in the village of La Esmerialda in the Huila department of Colombia, the Silencio farm is 1,555 meters above sea level and is owned by Jayler Prazas, a fourth-generation coffee grower. His father took over the farm 12 years ago, and Jayler took over the business himself three years ago. Today, the farm is run by the family with the help of his mother, brother and wife.

Silencio Farm grows a variety of coffee varieties, including Castillo, Colombia, Pacamara, Pink Bourbon, and Geisha. The main harvest season is from September to December, with a second harvest (Mitaka) from March to May. The coffee cherries are hand-picked by skilled farm staff and floated on water to be sorted by density. They are then fermented for 48 hours using a traditional method called "Toriba", de-shelled, and fermented for another 48 hours. Finally, they are carefully dried in Marchesina for 20 days.


At the Silencio farm, they grow a variety of unique varieties, including Castillo, Colombia, Pacamara, Pink Bourbon, and Geisha. The main harvest season is from September to December, and during the second harvest (Mitaka) from March to May, the coffee cherries are hand-picked by skilled farm staff and floated on water to be sorted by density. They are then fermented in two stages for a total of 96 hours using a traditional method called "Toriba", and the cherries are then de-shelled. Finally, the beans are slowly dried in Marchesina for 20 days to bring out their natural flavor.

Coffee beans are usually harvested in three or four batches, but El Silencio, in pursuit of exceptional quality, closely follows the harvesting process and carefully selects the cherries by hand after picking before processing begins. The first and last harvests are of slightly lower quality, but the second and third harvests are when the cherries reach optimal ripeness and are of uniform quality, resulting in the best quality coffee beans.
