This coffee is produced by Santos Aguirre, a coffee farmer from Intibuca. It features a moist, baked apple-like flavor with the refreshing fruitiness of cherry. The aftertaste carries a hint of woody aroma, reminiscent of maple syrup sweetness. The flavor profile is calm and composed, yet the clean acidity provides a perfect balance, making this coffee naturally enjoyable to drink.

Santos began his journey with coffee cultivation in 1992 when he was 12 years old. He received a piece of land measuring one manzana (approximately 0.7 hectares) from his father and planted 1,500 coffee seedlings. Since then, he has expanded his farm to 4 hectares. Initially, he sold only washed coffee cherries to local middlemen.

On his farm, Santos practices diligent management, including pruning, lime treatment of the soil, application of organic fertilizers, and weeding. He also uses chemical fertilizers (18-46-0), nitrates, and potassium chloride appropriately, based on soil analysis.

During harvest, only fully ripe cherries are carefully picked. Quality control involves sorting out floating and damaged cherries. The fermentation process takes 28 hours and is handled meticulously with the help of his family of nine. The drying process is done using a solar dome dryer over 20 days.

His coffee is fairly priced, and his dedication is recognized in the market. This revenue has improved his family's living standards and enabled the enhancement of farm facilities. Santos remains committed to quality and will continue to practice careful farm management in the future.
