This time, I would like to talk about how to choose a grinder , which is often asked by everyone.
Nowadays, interest in grinders is gradually increasing, but until a while ago, it seemed that the focus was mainly on extractors.
If I had to prioritize what I needed to make a really good cup of coffee, it would be:
1. Delicious coffee beans
2. Water of moderate hardness
3. Grinder
4. Extraction equipment and methods

In other words, there is less difference between large and small lumps, and they are roughly the same size.

The uniformity is low when coffee grounds of different sizes are mixed together.
I will explain as simply as possible why it is important to make it evenly fine.
This is because when the ground coffee beans are soaked in hot water and the components are extracted, differences in the size of the ground coffee beans will result in differences in the extracted components.
For example, if an extraction recipe is used for larger grains, finer grains will yield different flavors and textures. In most cases, it is a negative impression such as bitterness or miscellaneous taste.
In this way, it is easier to extract coffee with the desired taste if there are as few differentiations as possible that are much finer than the desired coffee bean size.
A commercial grinder costs around 500,000 yen.
The grinder we use in our cafe is the highest grade grinder that is officially used in world competitions. The uniformity is very high and the speed is fast, so it is indispensable for busy work. However, they are large, noisy, and very expensive.
A hand grinder is something you use while traveling
If you enjoy coffee at home, you don't need such a large commercial grinder .
Ideally, it should be compact enough to fit in your kitchen, and you can quickly grind it when you want to drink at your own pace.
And most importantly, look for a high performance grinder with "uniformity".
The price is less than 1/10 of the top-end model used in cafes, so you should be able to find something you can buy.
However, hand grinders may not be recommended for home coffee.
