Origin Information:

In Kenya, there are two harvest seasons: the main crop (October–December) and the fly crop (May–July). We always source from the main crop.
In the case of the main crop, flowering begins between February and March, and purchasing begins the following year between January and April.

At Githembe Factory, only ripe cherries are hand-picked and fully washed. After pulping, the beans are covered with mucilage—a sticky, sugar- and alcohol-rich substance that plays a key role in the sweetness, acidity, and overall flavor. This contributes to the clean and bright fruit character of AA Githembe.
The parchment coffee is fermented and then soaked for 16–18 hours in clean water drawn from the Thiririka River. Before drying, an additional soaking process is applied after grading.
